Make the most of the sunny weather with these creamy and delicious Almond Butter Magnum Ice Creams! These are the perfect healthy alternative to sugary supermarket ice creams. Featuring popular organic WellEasy favourites like cashews, almond butter, and dark chocolate, they’re sure to satisfy. 

Ingredients: 

• 1 cup cashews (soaked in boiling water for 15 minutes)
• 1 tin coconut milk
• 2 heaped tbsp almond butter
• 2 dates
• Pinch of sea salt
• 1 tsp vanilla extract
• 1 bag dark chocolate chips
• 1 heaped tbsp coconut oil
• 1/4 cup roughly chopped almonds

Method:

1. In a high-speed blender, combine the soaked cashews, coconut milk, almond butter, sea salt, dates, and vanilla. Blend until the mixture is creamy and smooth.
2. Pour the blended mixture into a silicone ice cream mould. Freeze until solid—overnight is the best for a perfect texture.
3. Melt the dark chocolate chips with the coconut oil in a heatproof bowl. Once melted, stir in the chopped almonds and pour the mixture into a glass. The glass helps in easy dipping.
4. Remove the ice creams and dip them into the chocolate mixture. Return them to the freezer until you’re ready to enjoy.
