Ingredients:

• 400g HU salted dark chocolate, finely chopped
• 800ml double cream (or plant-based alternative)
• 6 large eggs, separated
• ⅓ cup coconut sugar
• Flakey sea salt (to serve)
• Best quality extra virgin olive oil (to serve)

Method:
1️⃣ Add egg yolks to a saucepan with 400ml of the cream. Whisk and gently heat — do not boil.
2️⃣ Pour the warm cream mixture over the chopped chocolate. Stir until smooth, glossy & fully melted.
3️⃣ Whisk the remaining 400ml cream into soft peaks.
4️⃣ In a separate bowl, whisk egg whites with coconut sugar until stiff peaks form.
5️⃣ Gently fold whipped cream and egg whites into the chocolate mixture until just combined.
6️⃣ Pour into a large dish or individual pots and chill for a few hours until set.
7️⃣ To serve, drizzle with olive oil and finish with flakey sea salt ✨
