This makes a great healthy lunch or quick dinner. Mackerel is one of the richest sources of omega 3 fatty acids and an excellent source of Vitamin D which are both great for boosting immunity.

Tools:

  • apple corer
  • knife 
  • chopping board
  • mixing bowl
  • spoon

Ingredients:

  • x1 210g packet of boneless smoked mackerel fillets, skinned.
  • ½ celeriac peeled
  • 1 eating apple peeled 
  • 1 tsp dijon mustard
  • Juice of ½ a lemon
  • 2tbsp of coconut yoghurt (soy/ almond/dairy).
  • 2tbsp of mayonnaise
  • Olive oil
  • Handful of parsley finely chopped
  • 2 spring onions finely chopped 
  • 1tbsp of cider vinegar

Method: 

  1. In a large bowl, beat together the mustad, lemon juice, vinegar, yoghurt, mayonnaise and a splash of water. Season and set aside.
  2. Core the apple, then cut them and the celeriac into thin matchsticks.
  3. Add them into the bowl of dressing along with your spring onions and parsley. 
  4.  Slice your mackerel and serve with your slaw, and a good chunk of bread if you fancy.
