Ingredients:

1 handful of rocket
• 1 beef tomato
• 1 handful of red radish (chopped)
• 1 small handful of pine nuts
• 50g of fonio - mixed with 120ml water and cooked in the microwave for 2-3mins
• 1 tsp of capers
• 1 tbsp of avocado oil
• 1/2 tsp of chilli flakes
• 1/2 tsp of cumin seeds
•salt & pepper to taste

Method:

1. Cook the fonio as per instructions. Mix in capers, spices and oil.
2. Prepare other salad ingredients.
3. Combine well and serve
