As winter rolls in, nothing beats a bowl of warm, immune-boosting chicken noodle soup. This version, made with nutrient-rich bone broth, is perfect for keeping you cosy and supporting your health during the colder months. Bone broth is packed with collagen and minerals that support your gut and immune system, making this soup an ideal way to keep the family nourished. 

Ingredients: 

        Method:

        1. Heat oil in a pot and lightly brown the chicken thighs for 5 minutes. Remove and set aside.
        2. Sauté onions, carrots, and celery for 5 minutes until soft. Add garlic and cook for another minute.
        3. Add bone broth, water, thyme, and oregano. Simmer with the chicken for 20 minutes.
        4. Add noodles and cook until tender. Shred the chicken and return it to the soup.
        5. Garnish with parsley and a squeeze of lemon juice.
