Creamy Coconut Milk Chicken Orzo
The secret to this creamy orzo? Coconut Milk! If you always have a can of coconut milk in your cupboard, then you’ve got the base of a healthy, comforting meal. This addictive orzo recipe is made with red lentil orzo. And you could never tell it’s gluten-free, high in fibre, and packed with extra protein. Ingredients:

Chicken or additional protein of choice
- 1 leek, chopped
- 3 garlic cloves, sliced
- 1 heaped tbsp tomato paste
- 1 courgette, diced
- 200g cherry tomatoes
- 1 tsp chilli flakes
- 1 tsp sweet paprika
- 1 tbsp frozen basil (or fresh to taste)
- 125g profusion red lentil orzo
- 500ml chicken bone broth
- 1 can of WellEasy Regenerative Coconut milk
- 3 tbsp parmesan
Method:
- Gently fry leek and garlic in olive oil.
- Add tomato paste, courgette, cherry tomatoes, the herbs & spices and cook for 5 minutes before adding the orzo, bone broth and coconut milk.
- Cover with a lid and cook on medium heat (stirring as you go) for up to 20 minutes or until lentil orzo is soft and liquid has mostly evaporated.
- Finish with parmesan and stir through before serving.
