Ingredients:
Method:
  1. Gently fry leek and garlic in olive oil.
  2. Add tomato paste, courgette, cherry tomatoes, the herbs & spices and cook for 5 minutes before adding the orzo, bone broth and coconut milk.
  3. Cover with a lid and cook on medium heat (stirring as you go) for up to 20 minutes or until lentil orzo is soft and liquid has mostly evaporated.
  4. Finish with parmesan and stir through before serving.
