As the crisp autumn mornings start to roll in and the back-to-school rush begins, having a nourishing and easy-to-prep breakfast is essential. Enter the Layered Porridge Pear Cake Bars—a comforting, delicious, and healthy way to start your day.

All the comforting goodness of a warm bowl of porridge, transformed into healthy, fibre-packed bars. Layered with juicy, seasonal pears and a sprinkle of cinnamon, they’re the perfect healthy breakfast to meal prep. A cosy autumn breakfast, enjoyed warm or cold.

Ingredients:

    Method:

    1. Preheat your oven to 180°C.
    2. Toss the thinly sliced pears in the cinnamon and arrowroot powder, then set them aside.
    3. In a large mixing bowl, combine the oats, flour, baking powder, yoghurt, chia egg, maple syrup, vanilla extract, and plant milk. Stir well to create a smooth batter.
    4. Pour the batter into an oven-safe dish. Arrange the cinnamon-coated pears on top, creating a beautiful layered effect.
    5. Place the dish in the preheated oven and bake for about 40 minutes, or until the bars are golden and firm.
    6. Allow the bars to cool slightly before cutting into portions. You can serve them warm or cold, depending on your preference.
