A quick and classic way to serve asparagus with a protein boost. Served with a tangy vinaigrette and garnished with fresh dill, this dish is an easy impressive starter or a great nutrient dense breakfast.

Ingredients:


Method: 

  1. Bring a saucepan of water to the boil and hard boil your eggs for 7 minutes. 
  2. Simmer your asparagus in a frying pan of shallow water for 2-5 minutes until cooked through but still firm. Rinse under cold water and set aside. 
  3. In a bowl mix together the capers, olive oil, vinegar, mustard and half of the fresh dill. 
  4. Using a grater or a sieve, finely grate the egg over your asparagus. 
  5. Spoon over the dressing and enjoy!
