A super scrumptious grain free muffin recipe suitable for gluten free diets, paleo diets and vegan / vegetarian diets. This recipe is refined sugars free and is packed full of wholesome rich ingredients to keep you feeling energised.

Serves: 12 muffins

Tools:

  • 2 mixing bowls
  • wooden spoon
  • weighing scales
  • muffin / cupcake tray 
  • reusable muffin holders

Ingredients:

Dry ingredients: 

Wet ingredients:

Extra ingredients: 

  • 1 handful of cacao nibs
  • 1 handful of frozen raspberries

 

Method:

  1. Start by preheating the oven to 180 degrees.
  2. Combine the flaxseed and water together and set aside for 5-10mins to thicken.
  3. Combine the dry ingredients together and set to one side. And in a seperate mixing bowl mash up the bananas and place in the rest of the wet ingredients. 
  4. Gradually add the wet ingredients into the dry ingredients and mix well. Once combined add in the cacao nibs and raspberries.
  5. Separate evenly over the 12 cases and place into the oven to bake for 20mins, using a skewer check to see if they are baked all the way through. It will come out clean when they are. 
  6. Remove from the oven and allow to cool, serve and enjoy!
