Christmas is a time for indulging in delicious treats, and what better way to celebrate than with a warm and comforting Christmas crumble topped with homemade dairy-free custard. This festive dessert is the perfect way to end a holiday meal, and it's sure to impress your guests with its rich flavors and creamy texture.

Christmas crumble & homemade dairy free custard:
 
Filling:
2 Bramley/ cooking apples 
1/2 c cup mixed fruit (raisins, currants, cranberries) or mince meat SOAKED overnight in 1/4 cup water 
1 heaped tsp cinnamon 
1/2 tsp all spice 
1 tbsp coconut sugar 
 
Crumble:
1 cup self-raising gluten free flour 
1/4 cup oats 
Pinch salt 
75g butter 
 
Custard:
2 cups soya milk 
2 organic eggs 
1 tbsp cornflour 
Pinch nutmeg 
 
Method:
- preheat oven to 170.
- peel and slice the apples. Place into a pot with a drop of water and all the other filling ingredients. Cook on a low heat for 8-10 minutes until apples start to soften. 
- while that’s cooking make crumble by placing all ingredients into a bowl. Rub the butter into the flour with your fingers.
- pour apple filling into a baking dish then sprinkle crumble ontop. Bake in the oven on middle shelf for around d 40 minutes. Watch it doesn’t colour too much.
- to make the custard put soy milk, maple syrup, vanilla and nutmeg into a sauce pan. Heat gently - do not boil! 
- whisk the eggs and cornflour into a separate bowl then slowly pour the warm milk onto the eggs while whisking. Put back into the pot and cook over gentle heat, stirring often until it becomes thicker and coats the back of a spoon.
- serve over the crumble
