Healthy Almond Butter Magnum Ice Creams
We've been waiting all summer to bring this perfect refreshing sweet treat to you. This is a recipe to rival the magnum ice cream craving one and for all using only the best ingredients.
Ingredients:
🍦 1 cup cashews, soaked in boiling water for 15 minutes
🍦 1 tin coconut milk
🍦 2 heaped tbsp almond butter
🍦 2 dates
🍦 Pinch sea salt
🍦 1 tsp vanilla paste/extract
🍦 1 bag dark chocolate chips
🍦 1 heaped tbsp coconut oil
🍦 1/4 cup roughly chopped almonds
Method:
1. Blend soaked cashews, coconut milk, almond butter, salt, dates, and vanilla until creamy and smooth.
2. Pour into a silicone ice cream mould and freeze until solid (overnight is best).
3. Melt chocolate chips with coconut oil. Stir in chopped almonds and pour into a glass.
4. Dip ice cream into the chocolate mixture. Freeze again until ready to eat.
