Spooky Ghost Cookies - 2 diet version!
Yes you heard it right. 2 versions of this awesome Spooky Ghost Cookie recipe! Making it a great activity to get you into the spooky season. Follow the link to unlock the gluten free version as well as the keto version of these cookies.
1. Recipe for the Gluten Free version:
Serves: 9-12 cookies
Time: 30-45mins
Level: Easy
Tools:
- Oven set to 180 degrees
- Food processor
- Baking tray
- Parchment paper
- Shape cutters
Ingredients:
For the gluten free cookies:
- 1-2 ripe bananas
- 1 tin of chickpeas (drained)
- 75g peanut butter
- 2 tbsp of maple syrup
- 75g gluten free oats
- 1 tsp vanilla extract
For the toppings:
- decorative eyes
Method:
- Pre-heat the oven to 180 degrees.
- Place all ingredients into a food processor and blend until smooth. Ensure the consistency is like a thick batter. Add extra oats in to make thicker.
- Next take two baking trays and place a thin lining of batter across each. Place in the oven and cook for 10-15 mins.
- Once they are starting to firm out, remove from the oven and carefully press the shape cutter into the mix to create the shapes. Keep the mixture that is not cut into shapes on the baking tray as it will be too hot to remove (and they make great little treats!)
- Place bake into the oven for around another 10-15mins (until the cookies have started to brown and the edges are beginning to firm up.
- Once the cookies are cooked the whole way through, remove from the oven and allow to cool in order to firm up. Add the decorative eyes whilst still warm.
- Once the cookies are cooled place and store in an air tight container.
- Enjoy!
2. Recipe for the Keto version:
Serves: 9-12 cookies
Time: 20mins
Level: Easy
Tools:
- Oven set to 160
- Mixing bowl
- Whisk
- Baking tray
- Parchment paper
- Shape cutters
Ingredients:
For the keto cookies:- 1 Good Dee's Keto Cookie Mix
- 3 tbsps of melted butter or coconut oil
- 1 large egg
- 1 tsp of vanilla
For the toppings:
- mix together almond flour and water or use keto chocolate chips
Method:
- Start by preheating the oven to 160 degrees. Line and grease the baking tray.
- Melt the butter or coconut oil into the mixing bowl, add the egg, vanilla and mix well.
- Gradually add in the cookie mix and stir until all combined.
- Transfer all of mixture onto the lined baking tray.
- Bake for 10mins or until golden around the edges. Once they are starting to firm out, remove from the oven and carefully press the shape cutter into the mix to create the shapes. Keep the mixture that is not cut into shapes on the baking tray as it will be too hot to remove (and they make great little treats!)
- Place bake into the oven for around another 5mins (until the cookies have started to brown and the edges are beginning to firm up.
- Once the cookies are cooked the whole way through, remove from the oven and allow to cool in order to firm up. Add the decorative eyes whilst still warm.
- Once cooked allow to completely cool before trying to move them, otherwise they will not keep their shape.
