1. Recipe for the Gluten Free version:

Serves: 9-12 cookies
Time: 30-45mins
Level: Easy

Tools:

  • Oven set to 180 degrees
  • Food processor
  • Baking tray
  • Parchment paper
  • Shape cutters

Ingredients:

For the gluten free cookies:

For the toppings:

  • decorative eyes

Method:

  1. Pre-heat the oven to 180 degrees.
  2. Place all ingredients into a food processor and blend until smooth. Ensure the consistency is like a thick batter. Add extra oats in to make thicker.
  3. Next take two baking trays and place a thin lining of batter across each. Place in the oven and cook for 10-15 mins.
  4. Once they are starting to firm out, remove from the oven and carefully press the shape cutter into the mix to create the shapes. Keep the mixture that is not cut into shapes on the baking tray as it will be too hot to remove (and they make great little treats!)
  5. Place bake into the oven for around another 10-15mins (until the cookies have started to brown and the edges are beginning to firm up.
  6. Once the cookies are cooked the whole way through, remove from the oven and allow to cool in order to firm up. Add the decorative eyes whilst still warm.
  7. Once the cookies are cooled place and store in an air tight container.
  8. Enjoy!
