Serves: 2-4 Time: 5 minutes Level: Easy Tools: chopping board blender Ingredients: Handful of cashews / 50g (soaked for at least 30 minutes) 3 tbsp of olive oil Large handful of fresh basil Juice of half a lemon Large handful of fresh coriander Salt and pepper One small garlic clove 2tbsp of nutritional yeast (optional) Method: Add all the ingredients to a blender and blitz until well combined.
