Healthy Homemade Mince Pies
Looking for a healthier alternative to traditional mince pies? Try this nutritious recipe that will satisfy your sweet tooth without compromising your health goals. These healthy mince pies are packed with wholesome ingredients and are easy to make, making them the perfect guilt-free treat for the holiday season.
Pastry:
170g gluten free flour
170g ground almonds
2 tbsp coconut sugar
Pinch of salt
100g solid coconut oil
6 tbsp ice cold water
Mince meat: (this makes a little extra which you can store in the fridge for another batch!)
1/2 cup raisins
1/2 cup cranberries
1/2 cup currants
1/3 cup chopped soft prunes
1 red apple, grated
Zest and juice of 1 orange
Optional: 1/4 cup brandy OR 1/4 cup water
Method:
- to make the mince meat place all of the ingredients into a saucepan and heat slowly on a low heat. Allow the mixture to cook down for about 20-25 minutes until soft. Set aside and allow to cool completely once cooked.
- for the pastry: add the flour, ground almonds, coconut sugar, coconut oil and salt into a food processor and pulse until combined. Slowly stream in the water while processor is running until it comes together (don’t over mix).
- tip out onto surface and shape into a disk. Wrap in baking paper and rest for 20 minutes.
- Preheat oven to 160 fan.
- Roll the pastry out on a floured surface or ontop of another piece of baking paper. Use cookie cutters to cut out circles and place into a shallow muffin/ mince pie tin. Fill with the cooled mince meat.
- use a smaller circle cookie cutter or a small star to cut out the top piece of pastry. Brush with egg or leave plain and bake for 15-20 minutes until golden brown.
- serve warm for the yummiest homemade mince pies!
