It is Brain Awareness Week! And to celebrate we are sharing with you a brilliant baked tofu recipe! This recipe is keto friendly and plant-based. Tofu is packed full of phytoestrogens which help to improve the health and functioning of the brain Serves: 1-2 Time: 30mins Level: Easy Tools: Oven set to 180 degrees Baking tray Frying pan / steak pan Spiraliser Wooden spoon Ingredients: 200g cherry tomatoes 1 tbsp olive oil 2-3 cloves of garlic 1 block Tofu 1 tbsp miso bunch of asparagus 1/2 a courgette Method: Pre heat your oven to 180 degrees. Add into a baking tray tomatoes, oil, garlic tofu, miso and bake for 20-25minutes. Whilst the tofu is baking grill your asparagus and create your courgette noodles. Once the tofu dish is cooked through, mash all together (including the garlic which you may need to remove the skin. Plate up and enjoy!
