Whole Roasted Cauliflower with Lemon and Thyme

This spiced cauliflower recipe with honey, paprika in thyme is crispy on the outside and tender on the inside. It's simple to make and guaranteed to impress your friends as a veggie main or side dish.

Ingredients:

  • 1 whole cauliflower, stems removed
  • 1 garlic clove, grated
  • Olive oil
  • Handful of parsley, roughly chopped
  • 1 tbsp of thyme
  • 1 lemon
  • 1 1/2 tsp of paprika (smoked or hot)
  • Handful of flaked almonds or crushed almonds, toasted

Method:

  1. Preheat the oven to 180C.
  2. Trim the outer cauliflower leaves. Trim away and discard the stalk so the cauliflower can sit flat, then cut a cross into the base. Transfer the cauliflower to a casserole dish of boiling water and partly boil for 5-10 minutes. Drain and return to the dish.
  3. In a mixing bowl or pestle and mortar add in 2tbsp of olive oil, fresh or dried thyme, garlic and parsley, Mix together.
  4. Rub your marinade all over the cauliflower, drizzle with extra olive oil and squeeze the lemon juice on top. Season with salt and pepper.
  5. Cover and pop in the oven for 30-40 minutes, until tender, removing the lid halfway through.
  6. Remove from the oven and top with more olive oil, fresh parsley and almonds.
