Keto Rice Pudding
A keto take on another classic. A rice pudding made from the cauliflower rice.
- Wooden spoon
- 1 portion of cauliflower rice
- 3/4 tin of coconut milk
- 1 tsp cinnamon
- 1/4 tsp of stevia
- Optional: 1 egg white
- 1 tbsp strawberry jam
- Start by heating the cauliflower rice and coconut milk in the saucepan for 3-4mins.
- Add in the cinnamon, stevia and (if using egg white add that in too- be sure to mix well to avoid the egg whites from separating). Mix well and cook for a further 3-4mins until the mixture had thickened up.
- Transfer into a small bowl and top with strawberry jam.
