A keto take on another classic. A rice pudding made from the cauliflower rice.

  • Saucepan
  • Wooden spoon

Ingredients:

Method:

  1. Start by heating the cauliflower rice and coconut milk in the saucepan for 3-4mins.
  2. Add in the cinnamon, stevia and (if using egg white add that in too- be sure to mix well to avoid the egg whites from separating). Mix well and cook for a further 3-4mins until the mixture had thickened up.
  3. Transfer into a small bowl and top with strawberry jam. 
  4. Enjoy!
