Introducing... the healthiest and crispiest Chicken Caesar Salad recipe. Easy to make and packed with nutrients. This salad is rich in protein, with high-fibre crispy chickpea croutons and a creamy, refined sugar-free dressing. It's the perfect choice for a quick lunch or a light dinner

Ingredients & Method:

For caesar dressing:

  • 2 heaped tbsp thick/greek yoghurt
  • Juice of 1 lemon
  • 1 tbsp grated parmesan 
  • 1-2 anchovies 
  • Splash of vegan worcestershire sauce 
  • 1 small garlic clove, grated 
  • 1 chicken breast

For crispy chickpeas:

Pulse all the ingredients for the dressing slowly in a blender. Roast the chicken and chickpeas in a preheated oven at 200°C (400°F) for 25 minutes. Combine everything with your favourite salad leaves and enjoy!
