The Healthiest Chicken Caesar Salad

Ingredients & Method:
For caesar dressing:
- 2 heaped tbsp thick/greek yoghurt
- Juice of 1 lemon
- 1 tbsp grated parmesan
- 1-2 anchovies
- Splash of vegan worcestershire sauce
- 1 small garlic clove, grated
- 1 chicken breast
For crispy chickpeas:
Pulse all the ingredients for the dressing slowly in a blender. Roast the chicken and chickpeas in a preheated oven at 200°C (400°F) for 25 minutes. Combine everything with your favourite salad leaves and enjoy!
