If you miss scrambled eggs, or simply want to spice up your breakfast a little, this recipe is for you. Just 1 pan required, 10 minutes out of your day, and 7 simple, healthy ingredients are required to make this tasty dish.

 

If you’re like me, I used to adore scrambled eggs on toast when I was younger, but at some point I simply went off of eggs, and found a great alternative for scrambled eggs with the use of tofu. 

However, if you still love eggs, and want something which can help you mix up your breakfast (or whatever time of the day you like to eat breakfast foods) this recipe is for you too!

This recipe contains two super ingredients -  turmeric, and tofu. Did you know that tofu originated in China, which legendarily was discovered around 2000 years ago by a Chinese cook, who accidentally curdled the soya milk they were using, by adding nigari seaweed. The process for making tofu is very similar to making cheese in fact. Tofu has stood the test of time, and is used in many recipes, and meals (even vegan cheese sauce and smoothies).

 

Ingredients

225g Biona Organic firm tofu

¼ tsp salt

¼  tsp Bart turmeric powder

¼ tsp of salt

Pinch of ground black pepper

1tbsp of oil

 

  1. Chop the tofu and use a fork to crumble it into bite-sized pieces.
  2. Add some oil to a frying pan and when it’s hot, add the tofu and all the remaining ingredients (salt, turmeric powder, and ground black pepper).
  3. Stir until well combined and cook over medium-high heat for 5 to 10 minutes. Stir occasionally.
  4. Serve immediately over toast of your choice. We recommend our Biona Organic Pumpkin Seed Bread, as a tasty toast addition.
