Carrot, Coriander and Ginger Dip
Boasting the favourite carrot and ginger combo, this dip is smooth and bursting with flavour. It is also amazing for the gut as it doesn’t contain any trigger foods including tahini, which can cause inflammation due to its high lectin content.
Serves: 2-4 as a dip
Time: 15 minutes
- chopping board
- 3 large carrots, peeled and chopped
- Large handful of coriander
- 2 tbsp of olive oil
- 1 garlic clove
- Gnob of ginger, minced
- Splash of sesame oil
- 1.5 tsp of turmeric
- Add your carrots to a saucepan of boiling water and bring to the boil. Cook for around 6-7 minutes until tender.
- Add the carrots along with the other ingredients and blend until smooth. Add a little more oil if necessary and season to taste.
