A protein packed recipe using the awesome profusion Pea & Fava Bean Protein Chunks! These are an awesome, simple and incredibly effective protein source with only soaking involved to make them ready!
Start by soaking the pea and fava chunks in 0.75L of stock, leave to rehydrate for 25-30mins. Drain and set to onside.
Prepare the rest of the curry. Add the potatoes into the saucepan with boiling water and cook for 10-15mins until fork tender. When the potatoes are around 3 mins off start to cook the onion and garlic over a medium heat for 3-5mins.
Drain the potatoes and add in the curry paste to the onion mix with the soaked chunks, pepper, mushroom and cook for 5-8mins.
Add in the coconut milk, bring to the boil and then reduce to a simmer for 3-5mins.
Once all cooked remove from the heat and plate up and enjoy!
