An easy to scramble together lunchtime light meal which is full of wonderful colours, nutrients and most importantly - taste! This meal can be made the night before and makes for a great meal prep dish, or BBQ salad!
Start by preheating the oven to 200 degrees. Chop up all of the vegetables (minus the dark leafy greens and broccolini) and place onto the roasting tray alongside the coconut oil and salt & pepper. Roast for 20-30mins, stir half way.
Whilst the vegetables are cooking start to prepare the rest of the salad. Steam the broccolini for roughly 6-7mins on a low to medium heat.
When the vegetables are 3 mins off being ready cook the quinoa and transfer into a mixing bowl to cool slightly.
Once everything has cooled slightly add the dark leafy greens, followed by the quinoa and vegetables into a bowl, add on top the seeds, broccolini and protein of choice, cover with dressing and enjoy!
