A sensational summer salad dish, highlighting the Amisa falafel kit which is super easy and delicious to put together - a dish full of fibre, variety of different flavours and most importantly - balance!
Start by preheating the oven to 180 degrees. Chop up the celeriac and place onto the baking tray followed by the rest of the ingredients. Roast for 20-25mins.
Whilst the celeriac is cooking it is time to prepare the rest of the ingredients. Mix together 200ml of boiling water and 1 falafel mix and leave to stand for 15mins.
Whilst you are waiting for the falafel mix to be ready, start to organise the rest of the dish. Wash the kale and place onto a baking tray alongside a glug of oil, salt & pepper. Roast for 5-10mins (until slightly crispy) and then remove and allow to cool.
As soon as the falafel mix is ready, warm a pan with some oil and roll the mix into 9-12 balls. Fry until golden brown on all sides. Remove from the heat and leave to one side.
Chop up the tomatoes, apple and roasted red pepper and prepare to plate up.
Once everything is ready mix all ingredients together in a bowl, add on top the seeds, dressing, hummus and serve!
