Roasted Celeriac Falafel Salad
A sensational summer salad dish, highlighting the Amisa falafel kit which is super easy and delicious to put together - a dish full of fibre, variety of different flavours and most importantly - balance!

Tools:
- Oven set to 180 degrees
- Baking tray (x2)
- Chopping board
- knife
- measuring jug
- frying pan
Ingredients:
- 1 celeriac (chopped into cubes)
- 1 tbsp olive oil
- 1 tsp garlic granules
- 1 tsp italian herbs
- salt & pepper to taste
For the falafel:
- 1 falafel mix
- 200ml boiling water
- oil to cook with
For the salad:
- 2 handfuls of kale
- 1 handful of cherry tomatoes
- 1 apple (cored & chopped)
- 1 roasted red pepper (sliced)
- 1 small handful of activated seeds
- 1 tbsp hummus
- 1 tbsp olive oil dressing
Method:
- Start by preheating the oven to 180 degrees. Chop up the celeriac and place onto the baking tray followed by the rest of the ingredients. Roast for 20-25mins.
- Whilst the celeriac is cooking it is time to prepare the rest of the ingredients. Mix together 200ml of boiling water and 1 falafel mix and leave to stand for 15mins.
- Whilst you are waiting for the falafel mix to be ready, start to organise the rest of the dish. Wash the kale and place onto a baking tray alongside a glug of oil, salt & pepper. Roast for 5-10mins (until slightly crispy) and then remove and allow to cool.
- As soon as the falafel mix is ready, warm a pan with some oil and roll the mix into 9-12 balls. Fry until golden brown on all sides. Remove from the heat and leave to one side.
- Chop up the tomatoes, apple and roasted red pepper and prepare to plate up.
- Once everything is ready mix all ingredients together in a bowl, add on top the seeds, dressing, hummus and serve!
