Time: 40 minutes
- Baking tray
- chopping board
- 4 large parsnips
- 2tbsp of rapeseed oil
- Salt and pepper
- 1 ½ tsp of thyme/ sprigs of fresh thyme
- 1 tsp herbs
- Preheat the oven to 180C. Cut the ends of your parsnips and slice into thin batons.
- Place the parsnips onto a baking tray and combine with rapeseed oil, garlic, thyme and season with salt and pepper. Toss to coat. Roast in the oven for around 30-40 minutes until crispy and soft (shaking halfway through).
- Remove from the oven and enjoy with more salt and a healthy serving of mayonnaise.
