Parsnips are an unsung hero that have been overlooked until now! Loaded with vitamins and subtle flavours, parsnips are an unsung hero that are often overlooked...until now!

Level: easy


  • Baking tray
  • knife
  • chopping board


  • 4 large parsnips
  • 2tbsp of rapeseed oil
  • Salt and pepper
  • 1 ½ tsp of thyme/ sprigs of fresh thyme
  • 1 tsp herbs 

To serve:


  1. Preheat the oven to 180C. Cut the ends of your parsnips and slice into thin batons.
  2. Place the parsnips onto a baking tray and combine with rapeseed oil, garlic,  thyme and season with salt and pepper. Toss to coat. Roast in the oven for around 30-40 minutes until crispy and soft (shaking halfway through).
  3. Remove from the oven and enjoy with more salt and a healthy serving of mayonnaise.
