Also known as spiced kuku, this Iranian spiced omelette is made with fresh herbs and fragrant spices! Enjoy it as a flavourful brunch or tuck into it for a healthy dinner alongside a selection of salads, flatbreads and dips! 

Serves: 4-6

Ingredients:


Method:

  1. Preheat the oven to 180C and grease a baking dish or cast iron pan. 
  2. Heat ghee or olive oil in a frying pan over a medium heat and add in your chopped spring onions and garlic. Fry for a few minutes. 
  3. Finely chop or blend together your herbs and spinach and add to the frying pan. Mix together and remove from the heat to cool.
  4. In a mixing bowl, whisk together your eggs. Add in the cranberries, walnuts (save some for topping), baking powder and herb mix. Mix everything together and make sure it is all well combined. Transfer to a baking dish and cook in the oven for 20-25 minutes until set.
  5. Remove from the oven and sprinkle with walnuts and cranberries before serving.
