Start by adding the oil into the frying pan, cook the sausages until cooked through and browned on all sides. Remove from the heat and place the sausages into a bowl on the side.
In the same pan add in the onions and garlic. Cook until transparent and cooked through. Add in the tomato puree, chopped tomatoes and stock (or broth). Optional add in beans at this point. Bring to the boil and then reduce to a simmer. Add the cooked sausages back into the pan alongside the mixed herbs. Cook for 15mins.
During the last minute of cooking add in the rocket.
Serve with swede mash and steamed purple sprouted broccoli
