Strawberry Chia Seed Pudding
A scrumptious, hassle free keto breakfast which is packed with nutrient boosting chia seeds. Layered to perfection with heaps of tasty ingredients!
Serves: 1 portion
Time: 5mins to prepare, 20mins setting time
- 1 glass
- 1 small mixing bowl
- chopping board
- fridge to set
- Start by creating the base layer. Mix together chia seeds and plant-based milk in the glass you are creating the chia pudding in. Place into the fridge to set, mix again after 10 minutes to ensure all chia seeds soak evenly.
- In a separate mixing bowl combine the strawberry layer ingredients and place into the fridge to set.
- Whilst the layers are setting chop up the strawberries.
- Once both have set, place a handful of strawberries on top of the base layer, followed by the strawberry layer, followed by a handful of cacao nibs, followed by a layer of coconut yoghurt and then top with more strawberries, cacao nibs and cacao powder. (Equally if thats a little hard to follow layer as you like!)
- Serve and enjoy!
This recipe is a great idea for meal prep and can be made the night before and left in the fridge for up to 3 days.
