Instructions:
1. In a large pot, combine the minced garlic and chopped onion with 1 to 2 tablespoons of water and sauté until softened (approx. 3 minutes).
2. Add diced carrots, celery, potatoes, dried oregano, salt, and pepper. Cook until the potatoes and carrots have softened (approx. 6 minutes).
3. Pour in the vegetable broth, add the chopped tomatoes, chickpeas, and pasta. Bring the mixture to a boil, then simmer uncovered until the pasta is cooked (12-15 minutes).
4. Garnish your longevity soup with fresh parsley, season with salt and pepper as desired and enjoy!
Note: You can choose any kind of broth you like. For our version, we're using vegetable broth to make it veggie-friendly, perfect for those who are plant based or embracing Veganuary.
