Preheat the oven to 180C and line a 8/9 inch loaf tin.
Add the mashed bananas and eggs to a bowl and whisk well.
Add the rest of the ingredients and combine well with an electric whisk or by hand, until creamy and well combined.
Pour the batter into the prepared loaf tin.
For topping, peel and slice your fresh banana and layer it on top, this will add a nice caramelised flavour to your bread. You could also sprinkle over a handful of seeds of choice for a nice crunch.
Bake in the oven for 50-60 minutes until a skewer comes out clean. If the top gets too golden, cover with foil or greaseproof paper.
Transfer the bread to a wire rack and let it rest for 5-10 minutes before enjoying.
