Smoked Cod Skewers With Quick Carrot Pickle

A smokey delight, which is a stress free BBQ addition to pack some protein and spice into your longer garden bound nights!

Serves: 6-8 skewers

Time: 20mins

Tools:

  • bamboo skewers
  • chopping board
  • knife
  • mixing bowl
  • grill or BBQ
  • grater

Ingredients:

 

  • 1/2 red bell pepper (cubed)
  • 1/2 orange bell pepper (cubed)
For the quick pickle:

Method:

  1. Start by creating the quick pickle, add the grated carrot into a mixing bowl alongside the rest of the other ingredients and mix well. Place to one side and leave for 10-15mins
  2. Whilst the pickle is marinating start to make the fish skewers. Chop up the cod into cubes and place into a mixing bowl. Add all other ingredients (other than the peppers) and mix well. Leave to stand for 5-10mins. Whilst marinating either light up the BBQ or place the oven on to grill. 
  3. Once everything is ready use your hands to slide through chunks of the marinated cod followed by bell pepper. Repeat the process until you have used all of the ingredients. Cook for 8-12 minutes (until the fish is completely cooked the whole way through, flip halfway.
  4. Drain the pickle, or leave it as it is! Serve and enjoy!
